During the tour, Erja visited in Germany to cook some delicious lax soup on the MG Kitchen TV!
The lax soup is very popular dish in Finland. This traditional soup consists of salmon, potatoes, carrots and leek. Along with a rye bread it makes a great warm meal especially during the cold winter times. Erja playing her HOS electro-reso signature guitar and talking about cooking, motherhood, music and her new album with the host Andre. And speaking some Deutsch of course!
LAX SOUP á la Erja Lyytinen
600 g lax 8 middle size potatoes
1 l water
1 piece of fish stock
2 dl cream
4 table spoons of butter (or ca 80 gm)
hunch of salt
1 pot of dill
1-2 bay leaves
8-10 black peppers
Peel potatoes and carrots.
Chop onions, potatoes and carrots.
Put 50 g butter in the pan and sweat the onion in the butter quickly.
Put water to the pan and add fish stock.
Add potatoes and carrots.
Add black pepper and bay leaves.
Let it boil under the lid.
Add pieces of lax and let it boil until lax is almost done.
Add rest of the butter and let it melt.
Check the taste.
Crush fresh dill in small pieces,
add on top of the soup
Serve hot with rye bread and butter!
